Rich three layer Chocolate Cake recipe

Ingredients:

  • 3 large eggs
  • 2 cups all-purpose flour
  • 1¹/²cups granulated sugar
  • 1 cup unsweetened cocoa powder
  • ½ teaspoons baking powder
  • ½ teaspoons baking soda
  • 1 teaspoon salt
  • 1 cup whole milk
  • ½ cup vegetable oil
  • 2 teaspoons vanilla extract
  • 1 cup boiling water or hot coffee

  • For the frosting:

  • 1 cup unsalted butter (softened)
  • 2½ cups powdered sugar
  • ½ cup unsweetened cocoa powder
  • ½ teaspoon vanilla extract
  • 3  tablespoons milk

Instructions:

Preheat the oven to 350°F (175°C). Grease and flour three 8-inch round cake pans.

In a large bowl, mix together the flour, sugar, cocoa powder, baking powder, baking soda, and salt.

Add the eggs, milk, vegetable oil, and vanilla extract. Beat until smooth.

Gradually add the boiling water to the batter, mixing until well combined.

Pour the batter evenly into the prepared pans.

Bake for 35-minutes or until a toothpick inserted in the center comes out clean.

Let the cakes cool in the pans for 10 minutes, then turn them out onto a wire rack to cool completely.

Prepare the frosting:
In a large bowl, beat the softened butter until creamy.
Gradually add powdered sugar and cocoa powder, mixing until combined.
Add vanilla extract and milk, adjusting the milk until you reach your desired frosting consistency.

Assemble the cake:
Place one layer of cake on a serving plate. Spread a layer of frosting on top.
Add the second layer and repeat with frosting.
Place the final cake layer on top and frost the top and sides of the entire cake.
