Red velvet Cupcakes
Ingredients
- 21/2 cups cake flour
- 11/2 cup sugar
- 1 cup canola or vegetable oil
- 1 cup buttermilk /amasi
- 2 tablespoons cocoa
- 2 eggs
- 1 teaspoon vinegar
- 1 teaspoon baking soda
- 1/2 teaspoon salt
- 1 teaspoon vanilla essence
- 3 teaspoons red food colour
Methods
In a mixing bowl, add all the dry ingredients together
In a separate bowl, add eggs, oil, buttermilk, vinegar, red food colour and essence
Mix well until combined
Then add to the dry ingredients, mixing with a mixer or hand mixer
Then line your cupcake pan with a cupcake liner.
6. Pour the batter into the lined cupcake pan, filling each liner about 2/3 full.
7. Bake for 20 minutes or until a toothpick inserted into the centre of a cupcake comes out clean. The cupcakes should spring back when gently pressed and display a vibrant hue.
8. Once baked, allow the cupcakes to cool in the pan for 5 to 10 minutes. This cooling time helps the cupcakes set properly, making them easier to handle later.
9. Carefully transfer the cupcakes to a wire rack to cool completely. As they cool, your kitchen will be filled with the irresistible aroma of freshly baked red velvet.
