Grandma’s Fluffy Cinnamon Sugar Donut Muffins

For the Muffins:
- 2 cups all-purpose flour
- 3/4 cup granulated sugar
- 2 teaspoons baking powder
- 1/2 teaspoon baking soda
- 1/2 teaspoon salt
- 1 teaspoon ground cinnamon
- 1 cup buttermilk
- 2 large eggs
- 1/4 cup unsalted butter, melted
- 1 teaspoon vanilla extract

For the Cinnamon Sugar Coating:
- 1/2 cup unsalted butter, melted
- 1 cup granulated sugar
- 1 tablespoon ground cinnamon
Instructions
1. Prep:
Preheat oven to 375°F (190°C).
Grease or line a 12-cup muffin tin.
2. Mix Dry Ingredients:
In a large bowl, whisk together flour, sugar, baking powder, baking soda, salt, and cinnamon.
3. Mix Wet Ingredients:
In another bowl, whisk buttermilk, eggs, melted butter, and vanilla.
4. Combine:
Pour wet ingredients into dry and stir gently until just combined. Don’t overmix — batter will be thick.
5. Bake:
Divide batter evenly into muffin cups (about 2/3 full).
Bake 18–22 minutes or until a toothpick inserted comes out clean.
Let muffins cool 5 minutes in the pan.
6. Coat with Cinnamon Sugar:
While muffins are warm, brush each generously with melted butter.
Mix sugar and cinnamon in a shallow bowl.
Roll or sprinkle muffins in cinnamon sugar until fully coated.
