Black Forest Roll Cake

Ingredients :

  • For the Chocolate Sponge Cake:
  • 4 large eggs
  • 3/4 cup granulated sugar
  • 1 tsp vanilla extract
  • 1/2 cup all-purpose flour
  • 1/4 cup cocoa powder
  • 1/2 tsp baking powder
  • Pinch of salt
  • For the Filling:
  • 1 1/2 cups heavy whipping cream
  • 1/4 cup powdered sugar
  • 1 tsp vanilla extract
  • For the Ganache:
  • 1 cup dark chocolate, chopped
  • 1/2 cup heavy cream
  • For Garnish:
  • Whipped cream swirls
  • Fresh cherries
  • Grated chocolate

Instructions

Prepare the Sponge Cake:

Preheat the oven to 350°F (175°C). Line a 10x15-inch jelly roll pan with parchment paper.
Beat eggs and sugar until pale and thick. Stir in vanilla.
Sift together flour, cocoa powder, baking powder, and salt. Gradually fold into the egg mixture until smooth.
Spread batter evenly in the prepared pan. Bake for 10–12 minutes or until the top springs back when lightly touched.
Immediately roll the warm cake, with the parchment paper inside, into a log shape. Let cool completely.

Prepare the Filling:

Whip heavy cream, powdered sugar, and vanilla extract until stiff peaks form.
Unroll the cooled cake, spread an even layer of whipped cream, then roll it back up tightly. Chill for 1 hour.

Prepare the Ganache:

Heat cream until steaming (do not boil), then pour over chopped chocolate. Let sit for 2 minutes, then stir until smooth.
Let the ganache cool slightly, then spread over the rolled cake.

Decorate:

Slice the roll into segments and arrange them in a circle to form a wreath shape.
Add whipped cream swirls on each segment, top with fresh cherries, and sprinkle grated chocolate for an elegant finish.

Decoration Tips:

Add a dusting of powdered sugar for a snowy effect.
Use sprigs of fresh rosemary or pine to enhance the festive look.
Serve with a side of cherry compote for an extra burst of flavor.
